North African Chicken Tray Bake

If your new to African flavours, this is a great dish to get you started. Once I discovered Rose Harissa, my life changed forever. The smell, the spices are divine.
This recipe is naturally gluten free.

Equipment

  • Ovenproof dish

Ingredients
  

  • 10 ml Olive oil
  • 300 g Chicken fillets
  • 55 g Rose Harissa Paste.
  • 1 tbsp Red wine vinegar
  • ½ Red pepper
  • ½ Yellow pepper
  • ½ Green pepper
  • 40 g Drained chickpeas
  • 110 g Red onion (medium sized onion)
  • Salt and pepper

Instructions
 

  • Pre-heat your Oven to 180 degrees (fan assisted)
  • Place your Chicken breasts on a slide plate & scar the breasts with a sharp knife in several places.
  • Place the Paste in an Ovenproof/Lasagne dish, along with the Olive Oil, Red Wine Vinegar & a good serving of Salt & Pepper.
  • Now tear your Peppers into decent size chunks & add them into the dish.
  • Cut your Onion into quarters and peel off into petals & add to the dish also.
  • Now add the Chick Peas & mix everything together with your hands. Coat everything with the Paste, Oil &Vinegar.
  • With your now very messy hands, rub all the excess that is on your hands onto the Chicken Breasts & into the grooves.
  • Place the Chicken Breasts on top of the Veg in the dish and place in the Oven & cook for around 45-50 mins.
  • Serve & Enjoy.
