  • 1 tbsp olive oil
  • 250 g chicken breast
  • 60 g red onion chopped
  • 1 clove of garlic
  • 220 g italian chopped tomatoes in tomato juice
  • 1 chicken stock pot
  • 60 g Mozzarella
  • 1 tbsp fresh basil


  • Preheat Oven to 190 degrees.
  • Heat Oil in a frying pan, add Onion & Garlic & cook for 3-4 mins until Onion softens.
  • Add the chopped Tomatoes, chopped Basil & Stock Pot, then bring to the boil. Reduce heat and simmer for around 3 mins, stirring occasionally.
  • Place the Chicken Breast in an Oven-proof dish & cover the chicken with the sauce from the pan.
  • Slice your mozzarella and lay them on top of the dish, keeping them in a single layer.
  • Transfer to the Oven & cook for approx 25mins, until the cheese has completely melted & making sure the Chicken is cooked all the way through.
