Mexican Lasagne

This delicious recipe is suitable for 2 large portions or 4 portions with sides.

Ingredients
  

  • 10 ml Olive Oil.
  • 500 g Lean (5%) Beef Mince. (Use Quorn as a vegetarian option)
  • 1 Red pepper
  • 1 Green pepper
  • 40 g Red Onion
  • 10 g Green Chilli Pepper
  • 2 Garlic Cloves
  • 400 g Chopped Tomatoes
  • 20 g Tomato Puree
  • 100 g sweetcorn
  • 16 g Fajita Spice
  • 2 Large Tortilla Wraps 61g each (gf wraps available)
  • 100 g Grated Cheddar Cheese

Instructions
 

  • Preheat Oven to 180 degrees.
  • Cook the Peppers, Onion, Chilli & Garlic for around 2mins.
  • Add the Mince & brown.
  • Add Chopped Tomatoes, Sweetcorn, Fajita Spice & Tomato Puree, mix together & simmer for 15mins.
  • Transfer a portion into a Lasagne dish, (enough to cover the bottom).
  • Take 1 Tortilla Wrap and tear into pieces & randomly spread to cover the bottom layer of sauce
  • Repeat stages 5 & 6.
  • Sprinkle 100g of Grated Cheddar Cheese (extra strong if you wish) on top to cover the whole dish.
  • Place in the Oven for around 20-25mins.
  • With a smaller portion, serve with a side salad or an accompaniment of your choice.
