  • 1 kg chicken breast
  • 1 large red onion
  • 200 g button mushroom
  • 100 g peanut butter
  • 1 lime zest and juice
  • ½ tsp crushed chilli flakes
  • 4 cloves garlic
  • 1 tsp tumeric
  • 15 g corn flour
  • 1 chicken stock pot
  • 400 ml coconut milk Light/low fat


  • Place your Chopped Onion in the Slow Cooker, along with the Peanut Butter, Zest & Juice of 1 Lime, Crushed Chilli flakes, Garlic, Tumeric, Cornflour, Chicken Stock Pot & Coconut Milk.
  • Stir all the ingredients together, then add your whole Chicken Breasts
  • Make sure the Chicken Breasts are all completely covered & cook on low for 5hrs.
  • Increase to high for the last 30 mins & Serve with Rice or Veg.


Please note that the calories and macros might vary depending on which Peanut Butter you use. Try and use a good quality Peanut Butter (1 with no Palm Oil in it).
