Chicken Pie with Chorizo

Chicken Pie with Chorizo is perfect for anyone who wants a dinner loaded with protein (75g) & low in carbs (18g). This is a meal the whole family can enjoy! Accompany with any veg of your choice.

Ingredients
  

  • 5 ml Coconut oil (1 tsp)
  • 1 kg Diced chicken breast
  • 200 g chorizo
  • 2 cloves Garlic
  • 80 g Red onion
  • 150 g Baby spinach
  • 4 sheets Filo pastry
  • 250 ml Chicken Stock
  • 1 tbsp Corn flour
  • 20 ml Olive Oil (Drizzle)

Instructions
 

  • Pre heat oven to 180 degrees.
  • Heat pan with Coconut Oil & cook Chorizo for 2 mins.
  • Add Onion & Garlic and cook for a further 2-3 mins.
  • Add Chicken & cook for a further 3-4 mins.
  • Add Chicken Stock.
  • Mix the Cornflour with 2 Tbsp of water until smooth & add to the pan.
  • Bring to the boil until the sauce thickens, then add spinach & simmer.
  • Remove from the pan & place in a pie dish.
  • Let it cool a little before adding the pastry sheets (tear & spread).
  • Drizzle the pastry with Olive Oil & place in the Oven & cook for around 20 mins.
  • Serve with veg of your choice.
