Chicken Bhuna

Ingredients
  

  • 60 g White Onion
  • 1 tsp Olive Oil
  • 1 Thumb size of fresh ginger
  • 1 Red chilli
  • 2 cloves Garlic
  • 250 g Chicken breast
  • 200 g Tinned tomatoes
  • ½ Red pepper
  • 50 g Spinach
  • ½ tsp Turmeric
  • 1 tsp Mild curry powder
  • ½ tsp Chilli powder
  • 1 tsp Garam masala
  • ½ Lime (juice)

Instructions
 

  • Heat oil in a pan, add onion & cook for 3 mins (until onion has softened).
  • Add chopped ginger, chopped garlic & chopped red chilli & cook for a further 2 mins.
  • Add chicken & pepper & cook for a further 3mins.
  • Add chilli powder, garam masala, turmeric, curry powder & a splash of water. Coat & cook the meat in the spices for a further minute.
  • Add chopped tomatoes, bring to the boil, then cover & simmer for 10-15 mins.
  • Add a pinch of salt, fresh lime juice & the spinach.
  • Let it simmer for another 3 mins, then serve.
  • Garnish with a little fresh coriander & a bit more fresh lime juice. ( serve with rice or veg )
